Costco had a road show on, I had money burning a hole in my pocket... so I came home with a smoker. While most of the photos here were taken with a potato camera, I did take one shot with the real camera of the finished beef short ribs.
Sweet jebus there were amazing.
The new toy, Traeger Texas Pro.
5 spice dry rub put on the night before and then left in the fridge.
Short ribs after 2 hours smoking. After this they were wrapped in foil and tossed back on for another 2-2.5 hours
Once removed from the foil I did a glaze and set it back on the smoker for another 15-20 min.
Overall, I foresee myself getting a lot of use out of this smoker.

I host install days fairly regularly when I’ve got parts to put on my car. The smoker will certainly become a regular part of the install days now. =D

I have a smoker I got as a gift a few years ago. This summer I plan to smoke a Boston butt. Once I learn how to use the thing.

That is a friggin beauty there! You have to smoke a Ham over Cherry or Cherry/Apple mix. It will blow your mind.
I’m still chugging along with my old Char Griller, similar design without the square smoke box.

Sounds like a great idea! For me the best way to learn was to look up recopies and to just start smoking. So far I’m 2/3. Chicken and Ribs were great, the pizza was just OK.

I picked up a cherry apple blend of pellets when I got the smoker, I’ll have to try that next!

I’ve never tried the pellets. That’s interesting.
Keep a lookout on Craigslist for free Firewood. A lot of times people will give away Hickory, Maple, Cherry, etc. All you need is a sawzall to cut a few discs, a hammer to break them up into chunks and then soak them for a bit. It’s a lot cheaper and much better flavor than the store bought woods.

The box on mine isn’t a smoke box, it’s a hopper. It’s got an auger that feeds pellets into a smoke/burn box in the smoker and controls the temperature automatically. Takes a lot of the guess work out.
For a newb like me it really helps. It lets me focus on rubs, meat cuts, glazes, and time on the smoker.

Like a PDK in auto I suppose. I’m OK with that at the moment. I’m the kind of person that as I become more proficient, I’ll want to control all the variables myself.

Right on! We all have to start somewhere. You’ll get addicted and want more control for sure.
Try Breakfast on that with Hickory. Hickory smoked scrambled eggs, bacon, biscuits and gravy.. Amazing.
Sorry.. I’m dying to get out and go camping. I do have a million recipes though if you’re ever interested. Like smoked Corn Chowder and other oddballs.

That I’ve done actually. My parents have the same smoker (different model) and when visiting I had them buy a brisket for me to try. It ended up being a 13 hour smoke, mopped every 2 hours. My fiance and I made a rub from what my parents had on hand and it was a great success.
Next install day I’m going to do another brisket.
